Our Story
More than Great Food
Our journey began in 1996 at a place that shaped who we are today- the original Flor de Sol in Tribeca, New York. It was there that Mario Cazares and Alberto Gonzalez first met, both starting out as humble kitchen helpers and eventually worked their way up to chefs. Mario and Alberto each followed unique culinary paths.
Mario immersed himself in the bold, soulful flavors of Spanish cuisine, building a 28-year career that included six years at the original Flor de Sol, followed by five years as chef at Son Cubano on 14th Street, two years at Sangria 46, and a 12-year tenure at Café Olé, where he refined his signature style. Alberto spent a decade at Flor de Sol- six years as a line cook and four as sous chef- before stepping into a role as chef at Son Cubano on 14th Street in 2006, where he stayed for ten years. As that restaurant’s success grew, the owners opened a new Son Cubano in West New York, New Jersey, where Alberto was brought on to train the kitchen team and launch the restaurant as Executive Chef. He then continued his journey with the same group to help open another Son Cubano location on 25th Street and 10th Avenue in Manhattan, serving as chef for a year. Looking to expand his culinary repertoire, Alberto later joined Little Collins, a specialty coffee shop on 708 Third Avenue, as head chef for three years, bringing refined comfort food to a fast-paced Midtown crowd. He then went on to lead the kitchen at Go Nonna as head chef for four years, deepening his mastery of Italian cuisine while maintaining his foundation in bold, Mediterranean flavors. Though their careers took them in different directions, Mario and Alberto’s love for Spanish cooking and dedication to culinary craft brought them back together. After many years honing their skills in esteemed kitchens, they decided to open their own place. Today, they proudly revive the name and spirit of their roots with the opening of a new Flor de Sol- a tribute to where it all began
